Recipe – Mango Salsa


1 ½ cups               chopped peeled mango

1 cup                     chopped peeled cucumber

⅔ cup                    chopped red bell pepper

⅔ cup                    green onions

¼ cup                    chopped fresh cilantro

2 tablespoons    fresh lime juice

4 teaspoons       olive oil

Salt and pepper to taste


Mix all ingredients together in a small bowl. Cover and chill. Can be made ahead

Tip: feel free to use substitutions. I used orange bell pepper and red onion because that is what I had on hand.
